The secret is the marinade and the timing. We use full-fat cream and a soft cheese blend to lock in moisture, marinate for at least 12 hours, and pull the skewers from the tandoor at the precise moment the cream lightly caramelizes — never overcooked, never dry. This is what authentic Indian malai kabob is supposed to taste like.
